Ingredients

1 cup ginger , skinned and sliced into chips
1/2 cup onion , finely chopped
4 green chilies , coarsely chopped
1 1/2 tablespoons tamarind pulp
2 teaspoons sugar or 2 teaspoons jaggery
salt
oil , to fry
Sweet-sour Ginger is an Indo-Chinese fusion dish loved by north Indians, especially during monsoons. The natural spicy flavor of ginger combined with the tangy tamarind-based sauce balances the taste of the recipe. Instructions

1.Soak tamarind pulp in a half-cup of warm water. After half an hour, remove seeds and fibers by filtering through a strainer. Keep the concentrate aside.
2.Heat oil in a pan on medium heat and fry sliced ginger chips until brown.
3.Take out fried ginger chips, and in the same oil fry chopped onions until they are translucent.
4.Add coarsely chopped green chilies and fry for a few seconds.
5.Add the tamarind pulp concentrate along with salt and sugar (or jaggery) and bring to a boil.
6.Add the fried ginger chips to the tamarind sauce and mix well. Cook for a couple of minutes until all the flavors and spices are absorbed by ginger chips.
7.Serve hot sweet-sour ginger as an appetizer with any meal or enjoy it as a crunch munch snack!
