3 lbs boneless beef chuck , trimmed and cut into 1 1/2 inch cubes
1 cup all purpose flour
1 teaspoon salt

1/3 cup bacon drippings
2 large yellow onions , coarsely chopped
2 large garlic cloves , minced
1 tablespoon minced fresh ginger
2 bay leaves
1 teaspoon crumbled dried thyme
14 1/2 ounces diced tomatoes
1/4 cup red wine vinegar
2 tablespoons molasses
2 tablespoons tomato paste
2 cups peeled baby carrots

Instructions

1.Preheat the oven to 325°F.
2.In a large bowl, combine flour, salt, and black pepper. Dredge beef cubes in the mixture until evenly coated.
3.In a Dutch oven, heat bacon drippings over medium heat until hot. Brown beef cubes in batches, and transfer to a plate.
4.Add onions, garlic, and ginger to the pot and cook until softened, about 5 minutes.
5.Return the beef to the pot with bay leaves, dried thyme, and diced tomatoes. Bring the mixture to a boil.
6.In a small bowl, whisk together red wine vinegar, molasses, and tomato paste. Add to the pot.
7.Add enough water to cover the beef and bring to a boil again. Cover the pot and transfer to the oven to bake for about 2 hours.
8.Add peeled baby carrots and continue baking until tender, about 30 minutes more.
9.Discard bay leaves before serving.
