Ingredients

1/4 cup unsweetened dried shredded coconut
1/4 cup chopped roasted peanuts
3 tablespoons sugar
2 cups glutinous-rice flour ( plus more as needed )
1/2 teaspoon salt
three 1/2-inch slices peeled fresh ginger

Instructions

1.In a large bowl, combine the shredded coconut, chopped peanuts, and sugar. Mix well and set aside.
2.In a separate bowl, whisk together the glutinous-rice flour and salt. Gradually add in warm water while mixing with a wooden spoon until a smooth dough forms. If the dough is too dry, add more water. If the dough is too wet, add more flour.
3.Roll the dough into small balls and flatten slightly. Place a slice of ginger inside each ball and smooth the dough back over to encase the ginger. Repeat with the remaining dough.
4.Bring a pot of water to a boil. Add the dumplings and cook for 5-7 minutes, or until they float to the surface. Remove the dumplings with a slotted spoon and roll them in the coconut-peanut-sugar mixture until coated. Serve warm.
