Ingredients

4 medium sweet potatoes
1/4 teaspoon salt
1/8 teaspoon pepper
4 tablespoons brown sugar
4 tablespoons unsalted butter , cold , diced
3 tablespoons whole wheat bread crumbs
Baked Sweet Potatoes is a traditional German dish that is a staple for any holiday table or cozy night in. The recipe is simple and effortless, but the dish turns out to be delicious and heartwarming making it perfect for the fall and winter months. This dish is perfect as a main dish, or you can treat it as a side dish for a comforting meal.

Instructions

1.Preheat oven to 375F (190C).
2.Scrub sweet potatoes clean, pat dry, then prick with a fork.
3.Line a baking sheet with parchment paper, place sweet potatoes on the sheet then bake for 45 to 50 minutes until they are fork-tender.
4.Remove from the oven and allow it to cool for a few minutes.
5.Once cooled, slice each potato lengthwise, push the ends to open up the potato scoop out the flesh from the center of the sweet potato and put it in a bowl.
6.Combine the scooped-out sweet potato, salt, pepper, 2 tablespoons brown sugar and 2 tablespoons of butter in a mixing bowl mashing with a fork until smooth.
7.Refill each sweet potato skin with a portion of the mashed mixture.
8.In a separate mixing bowl, beat the remaining butter and brown sugar, whole wheat bread crumbs until it becomes crumbly.
9.Sprinkle over the stuffed sweet potatoes.
10.Return them to the oven and bake for additional 15-20 minutes until the top is slightly golden brown.
