1/2 cup sugar ( I use 2 T sugar for a less sweet bun )
3 teaspoons yeast
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
4 tablespoons lard or 4 tablespoons butter

Instructions

1.Peel and cut sweet potato into small pieces and steam until soft. Mash and set aside to cool.

3.In a large mixing bowl, combine flour, baking powder, and salt. Add the mashed sweet potato, yeast mixture, and lard or butter. Mix until a dough forms.
4.Knead the dough for 10 minutes until smooth. Cover with a damp cloth and let it rest for 1 hour in a warm place.
5.After the dough has risen, knead it again for 5 more minutes. Roll the dough into a long log and cut it into small pieces. Roll each piece into a ball and flatten slightly. Let them rest for 10 minutes.
6.Steam the mantou over high heat for 10-12 minutes, or until they are fluffy and cooked through.
