2 sweet potatoes
2 egg yolks
1 cup ricotta cheese

Instructions

10.Add in the gnudi and cook for 3 to 4 minutes, or until they rise to the surface.
11.Drain and set aside.
12.For the sage butter, melt the butter in a large skillet over medium heat until it begins to foam.
13.Add in the fresh sage leaves and cook for 1 to 2 minutes, or until fragrant and the butter has turned a light brown color.
14.Remove from heat.
15.Serve the cooked gnudi with the sage butter and sprinkle with chopped fresh sage leaves and shredded Parmigiano-Reggiano cheese. Enjoy!
