Ingredients

2 tablespoons unsalted butter
1 medium yellow onion , roughly chopped
2 garlic cloves , minced
1 ounce fresh ginger , peeled and thinly sliced

1/2 fresh jalapeno , seeds and ribs removed , and left whole
2 lbs sweet potatoes , peeled and cut into 1-inch cubes ( about 4 medium )
chicken broth
1 teaspoon kosher salt , more to taste
1/2 cup heavy cream ( optional )
1 tablespoon fresh lime juice
1 tablespoon light brown sugar
fresh ground white pepper
1/2 cup plain yogurt ( nonfat or low-fat )
1/2 apple , peeled , cored , and finely diced ( such as Gala or Pink Lady )
1/4 cup chopped of fresh mint
1/2 teaspoon finely minced fresh jalapeno , more to taste
kosher salt & freshly ground black pepper
Sweet Potato & Ginger Soup With Apple-Mint Raita is a flavorful and creamy soup perfect for any occasion. Instructions

1.In a large pot, melt the butter over medium heat.
2.Add the chopped onion and sauté until softened.

4.Add the sweet potatoes to the pot and stir to combine with the onion mixture.
5.Pour in enough chicken broth to cover the sweet potatoes and stir in the kosher salt.

7.Remove the jalapeno from the soup and discard.

10.Season with additional salt and white pepper to taste.
11.In a small bowl, stir together the yogurt, diced apple, mint, minced jalapeno, salt, and black pepper.
