Ingredients

3 1/2 lbs sweet potatoes or 3 1/2 lbs yams , peeled and cut into 3/4-inch cubes
2 large onions , cut into 3/4-inch chunks
lite olive oil or vegetable oil
2 cups fresh cranberries ( do not thaw if using frozen cranberries ) or 2 cups frozen cranberries ( do not thaw if using frozen cranberries )
2/3 cup golden brown sugar
2 tablespoons melted butter or 2 tablespoons margarine
1 large orange , juice and rind of
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon cinnamon
This Sweet Potato-Cranberry Casserole is a delicious and unique way to enjoy sweet potatoes. Instructions

1.Preheat oven to 400°F.
2.Arrange sweet potatoes and onions on a large baking sheet.
3.Drizzle with oil and toss to coat.
4.Roast for 25-30 minutes or until tender and slightly caramelized.
5.Reduce oven temperature to 350°F.
6.Add roasted vegetables, cranberries, brown sugar, melted butter or margarine, orange juice and rind, salt, nutmeg, ginger, and cinnamon to a large mixing bowl.
7.Toss to combine.
8.Transfer mixture to a large baking dish.
9.Cover with foil and bake for 25 minutes.
10.Remove foil and bake for an additional 10-15 minutes or until golden and bubbly on top.
