1 teaspoon pepper , to taste
2 teaspoons nutmeg , to taste
1 cup milk , as needed
1/2 cup grated manchego cheese , to taste

Instructions

1.Preheat the oven to 400°F/200°C.
2.Peel and slice the sweet potato into rounds.
3.Trim the zucchini, then sliced it into rounds.
4.In a baking dish, arrange alternate layers of sweet potato and zucchini.
5.Season each layer with salt, pepper, and nutmeg to taste.
6.Pour the milk over the layers until it’s about halfway up the side of the dish.
7.Sprinkle with grated Manchego cheese.
8.Cover with foil and bake in the preheated oven for 40 minutes.
9.Remove the foil and continue cooking for another 20 minutes to brown the cheese on top.
10.Let it cool for 10 minutes before serving.
