Ingredients

2 lbs boneless pork shoulder or 2 lbs pork butt
2 cans Coke , divided ( NOT diet coke )
1/4 cup brown sugar
1 dash garlic salt
1 dash onion salt
1 teaspoon ground cumin
1 chili in adobo sauce , minced
1/4 cup water
1 can diced green chilies
0.75 can red enchilada sauce ( 3/4 of a 10 ounce can )
1/2 cup brown sugar ( up to 1/2 cup more if desired )
1 tablespoon butter

Instructions

1.Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
2.Cut pork into 2 inch cubes and place in a baking dish.
3.Pour one can of Coke over the pork and sprinkle with brown sugar, garlic salt, onion salt, ground cumin, and chili in adobo sauce.
4.Cover tightly with aluminum foil and bake for 2-3 hours or until pork is tender.
5.In a large skillet, combine the remaining can of Coke, water, green chilies, red enchilada sauce, brown sugar, and butter and bring to a boil.
6.Reduce heat and simmer for 10 minutes.
7.Shred the pork and add to the skillet with the sauce.
8.Simmer for an additional 10-15 minutes or until sauce is thickened to your liking.
