Ingredients

1 lb sweet Italian sausage ( bulk or with casings removed )
1 medium onion , diced
1/2 cup fennel ( sliced or diced )
2 cloves garlic , minced fine
1 can crushed tomatoes , do not drain , with basil if you can find it
6 cups water
1/2 cup orzo pasta
2 beef bouillon cubes or 2 tablespoons beef bouillon granules
1 tablespoon fresh basil
1 lb fresh green beans ( trimmed & 1 inch pieces ) or ( 16 ounce ) bag frozen green beans
6 carrots , diced
1/4 cup chicken broth

Instructions

1.In a large pot, cook sweet Italian sausage over medium-high heat until browned.
2.Add diced onion, sliced or diced fennel, and minced garlic to the pot and cook until the onions and fennel are tender.
3.Add crushed tomatoes, water, orzo pasta, beef bouillon, and fresh basil to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.
4.Add trimmed and 1 inch pieces of fresh green beans, diced carrots, and chicken broth to the pot. Cover and simmer for an additional 30 minutes or until green beans and carrots are tender.
