8 cups water
2 cups dried sweet corn
2 cups dried pinto beans , or borlotti , soaked overnight in water to cover and drained
1 1/2 lbs collard greens , washed , rough stems removed , coarsely chopped

Instructions

1.In a large pot, melt the butter over medium heat.
2.Add the onion and salt, and cook until the onion is translucent, about 5 minutes.
3.Add the tomato paste and red pepper flakes, and cook for another 5 minutes.
4.Add the water, sweet corn, and beans, and bring to a simmer.
5.Reduce heat to low, cover and simmer for 1 hour.
6.Add the collard greens and cook for another 30 minutes.
7.Serve hot with extra red pepper flakes, if desired.
