Ingredients

salmon skin , leave 1 cm of flesh attached
1/2 cup sweet chili sauce
1 tablespoon sesame oil
1 sheet nori
1 cup sushi rice ( cooked )
1 ripe avocado
1 paprika
1 tablespoon flying fish eggs ( decoration )
1 tablespoon mayonnaise
This delicious Sweet Chilli Glazed Salmon Skin Sushi Roll is a modern twist on the traditional sushi roll. Instructions

1.Preheat oven to 200C/400F.
2.In a bowl mix together the sweet chili sauce and sesame oil.
3.Brush the sauce mix over the salmon skin.
4.Place the salmon skin on a baking tray and cook in the middle of the preheated oven for 15 minutes.
5.While the salmon skin is cooking, cut up your vegetables including avocado and paprika.
6.Lay your nori sheet on a sushi mat and spread cooked sushi rice over the top, leaving around 1cm free at the top and bottom.
7.Layer the cooked salmon skin over the sushi rice.
8.Layer the avocado and paprika over the salmon skin.
9.Drizzle mayonnaise over the top.
10.Roll the sushi tightly and firmly over the layer of ingredients.
11.Slice the sushi roll into bite-size pieces.
12.Serve the sushi on a plate, topped with flying fish eggs for decoration.
