Sweet Candied Papaya is a popular dessert in Cape Verde, a small island nation off the coast of West Africa. This tropical treat features succulent pieces of papaya that have been slow-cooked in a sweet syrup until they're translucent and tender. The addition of the cloves, cinnamon, and lemon zest provides a subtle spice and citrus flavor that perfectly complements the natural sweetness of the papayas. This dish is a great example of how simple ingredients can be transformed into a truly decadent dessert.

Instructions

1.Peel and deseed the papayas, then cut them into small, bite-sized pieces.
2.In a large pot, add the papayas, sugar, cloves, cinnamon stick, and water and stir to combine.
3.Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar, then reduce the heat to low and let the mixture simmer for 2-3 hours or until the papayas are translucent and the syrup has thickened.
4.Remove the pot from the heat and stir in the grated lemon zest.
5.Allow the mixture to cool completely, then transfer to an airtight container and refrigerate for up to a month.

PROS

This sweet and tangy treat is a great way to enjoy papayas and satisfy your sweet tooth at the same time.
It’s also a great way to use up any leftover papayas that may be in danger of going to waste.

CONS

The high sugar content in this recipe makes it a less-than-ideal option for those watching their sugar intake.
Additionally, the lengthy cooking time may not be ideal for those short on time.

HEALTH & BENEFITS

Papayas are packed full of vitamins A and C, as well as antioxidants that help to boost immune function and combat inflammation. They’re also a great source of fiber, which aids in digestion and can help to reduce the risk of chronic diseases.
