Ingredients

18 dried corn husks
2 cups sugar
2 teaspoons cinnamon
1/2 teaspoon nutmeg
9 large cooking apples ( such as Granny Smith )
4 tablespoons water
1/2 cup butter
1 cup warm apple juice
1 cup instant masa harina
1/4 cup unsalted butter , slightly softened
1/4 cup cream cheese , slightly softened
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 cup brown sugar
1/4 cup shelled chopped walnuts
1/4 cup golden raisin ( optional )
caramel sauce ( optional )
1 quart vanilla ice cream ( optional )
Sweet Apple Dessert Tamales are a spin on the traditional tamale and are perfect for anyone who loves a good dessert. The dish originated in Mexico and is traditionally made with masa dough and a savory filling of meat or cheese. For this recipe, we have swapped out the savory filling for a sweet concoction of apples, cinnamon, nutmeg, and brown sugar. The result is a delicious dessert that is perfect for fall. Instructions

1.Rehydrate corn husks for at least 2 hours in warm water.
2.In a bowl, mix together 1 cup of sugar, cinnamon and nutmeg.
3.In a pot, peel and slice the apples into small pieces and mix in the sugar mixture and 4 tablespoons of water. Cook over medium heat for 20 minutes or until the apples are soft but still hold their shape. Set aside and let it cool.
4.In a mixing bowl, cream 1/2 cup of softened butter, 1/4 cup of cream cheese, and 1/2 cup of sugar together until light and fluffy.
5.In another mixing bowl, whisk together 1 cup of instant masa harina, 1/2 teaspoon of salt, and 1/2 teaspoon of baking powder.
6.Gradually add the dry ingredients and 1 cup of warm apple juice to the butter mixture until well combined.
7.Drain the corn husks and pat them dry; spread around 1/4 cup of masa dough on each corn husk, leaving a 1-inch border around the edge.
8.Add 1 tablespoon of the apple mixture onto the center of the masa dough.
9.Sprinkle some brown sugar, chopped walnuts, and golden raisins over the apples.
10.Carefully fold the long sides of the corn husk together, then fold the narrow end up and the wide end over the seam.
11.Steam the tamales for 45 minutes and let them cool slightly before serving.
12.Serve with caramel sauce and vanilla ice cream if desired.
