The Yorkshire pudding is a traditional English dish that is typically eaten as a side dish with roast beef, gravy, and vegetables. It is made from a simple batter of flour, eggs, and milk, which is traditionally cooked in beef drippings to give it a rich and savory flavor. In this recipe, we put a Swedish twist on the classic by using a muffin pan to make individual puddings and serving it as a side dish alongside other types of meats and vegetables. These Yorkshire puddings are guaranteed to make any roast dinner complete.

Instructions

.Preheat the oven to 425°F (220°C).
.In a mixing bowl, whisk together the flour and salt.
.Make a well in the center of the mixture and crack the egg into it.
.Pour in half of the milk and whisk until smooth.
.Gradually pour in the rest of the milk, whisking all the time until the mixture is lump-free.
.Allow the batter to rest for 30 minutes.
.Spoon the beef drippings into a 12 hole muffin pan, dividing it evenly among the holes.
.Place the muffin pan in the oven and heat until the drippings are sizzling hot.
.Remove the muffin pan from the oven and carefully pour the batter into the holes, filling each hole about 3/4 full.
.Return the muffin pan to the oven and bake for 20-25 minutes, or until the puddings are puffed up, golden brown and crispy on the outside.
.Serve hot as a side dish for roast beef or other meats and vegetables, or topped with berries and whipped cream for a sweet treat.
