1 medium sweet potato , peeled and cut into 1/2 inch cubes
1 large onion , cut into 1/2 inch cubes
2 granny smith apples , peeled , cored and cut into 1/2 inch cubes
2 shallots , coarsely chopped
1 garlic clove , chopped
1 teaspoon fresh thyme
1 tablespoon of fresh mint , finely chopped
2 tablespoons water
1 tablespoon olive oil
1/2 teaspoon ground cinnamon
2 cardamom pods or 1/4 teaspoon ground cardamom
2 star anise
2 whole cloves or 1/8 teaspoon ground cloves
2 black peppercorns
4 white peppercorns
1 teaspoon kosher salt
1 chicken , about 3 and 1/2 pounds , preferably free-range
1/2 cup water
1/2 cup chicken stock or 1/2 cup dry white wine
1 cup long grain white rice , raw
1 cup water
1 teaspoon kosher salt
5 1/2 tablespoons plain yogurt
fresh ground black pepper

Instructions

1.Preheat oven to 430 F (220 C).
2.In a large bowl, mix together sweet potato, onion, granny smith apples, shallots, garlic, thyme, fresh mint, water, olive oil, ground cinnamon, cardamom pods, star anise, whole cloves, black and white peppercorns and kosher salt.
3.Stuff the chicken with half of the mixture and tie the legs.
4.Place the chicken in a baking dish and pour in chicken stock and water.
5.Rub the remaining mixture on the chicken and sprinkle fresh ground black pepper on top.
6.Bake the chicken for 1 hour and 20 minutes or until the internal temperature reaches 165°F (74°C).
7.While the chicken is cooking, prepare the rice. Rinse the rice under cold water and put it into a medium-sized pot with water and kosher salt.
8.Bring the pot to a boil, lower the heat to low, cover, and let cook for about 18 minutes. Turn off the heat.
9.Let the rice sit covered for 10 minutes.
10.Meanwhile, in a small saucepan heat 1 tablespoon of olive oil over medium heat and add the apple cubes, cinnamon, star anise, and 1/2 teaspoon kosher salt. Cook for about 10 minutes over low heat.
11.Remove the star anise and serve the spiced apple rice as a side for the roast chicken.
