1 sheet frozen puff pastry

1/4 lb bacon
1 small yellow onions or 1 small white onion , thinly sliced
cornmeal
1 egg
1 tablespoon all-purpose flour
1/3 cup grated gruyere cheese
3/4 cup ricotta cheese
3 tablespoons plain yogurt
1 pinch salt

Instructions

1.Preheat oven to 425°F (218°C).
2.Defrost the puff pastry and place it on a lightly floured surface.
3.Using a fork, prick holes across the surface of the pastry.
4.Spread olive oil over the pastry, leaving a 1/2-inch border around the edges.
5.Cook bacon in a skillet over medium heat until it becomes crisp, then remove the bacon with a slotted spoon and let it drain on a paper towel. Keep two tablespoons of bacon grease in the skillet and brown the onions in it.
6.Remove any excess oil from the skillet and let it cool.
7.Beat an egg in a small bowl and brush it around the edges of the pastry.
8.In a bowl, mix the flour, grated Gruyere cheese, Ricotta cheese, and yogurt. Add salt to taste.
9.Spread the mixture over the pastry, leaving the edges free from the mixture.
10.Add the bacon and onions over the mixture

12.Bake for 20-25 minutes, until the pastry turns golden-brown.
13.Remove from the oven and let it cool on a wire rack for 5 minutes before cutting into slices and serving.
