2 cups dried yellow peas
1 1/2 lbs unsmoked salted bacon ( or 1 small , salted knuckle of pork )
1 large onion , coarsely chopped
salt
pepper
1 bay leaf
thyme
marjoram
mustard ( optional )

Instructions

1.Rinse the peas under cold running water, then place them in a large pot with enough water to cover them. Bring to a boil, then reduce heat and let simmer for 1 hour.

3.In the same pan, sauté the chopped onion until soft and translucent.
