Ingredients

1 1/2 lbs ground beef
1 egg , lightly beaten
1/2 cup Pepperidge Farm Herb Stuffing , finely crushed . ( Bag is dark blue )
1/4 teaspoon ground nutmeg
1 can cream of mushroom soup ( Campbell 's Healthy Request , divided )
1/2 cup sour cream
nutmeg ( optional garnish )
cucumber , slices ( optional garnish )

Instructions

1.Preheat oven to 350°F/ 180°C.

4.Bake for 45 minutes or until internal temperature reaches 165°F/ 75°C.

6.Once the meatloaf is cooked, let it rest for 5-10 minutes before slicing.
7.Serve hot with mushroom sauce on top and garnish with cucumber slices and a sprinkle of nutmeg if desired.
