Ingredients

4 lbs fresh salmon , center cut
3 1/2 tablespoons coarse salt
3 1/2 tablespoons sugar
4 teaspoons white peppercorns , crushed
1 bunch fresh dill
2 tablespoons mild mustard
1 teaspoon mustard powder
1 tablespoon sugar
1 1/2 tablespoons wine vinegar
3 tablespoons salad oil
salt and pepper
3 tablespoons chopped fresh dill
Swedish Dill Salmon, also known as Gravlax, is a traditional Scandinavian recipe that is perfect for summer barbecues or picnics. The dish is prepared by marinating fresh salmon in salt, sugar, white peppercorns, and dill. The marinade draws out the moisture from the salmon while infusing it with a wonderful blend of flavors. Once the salmon is fully marinated, it is brushed with a delicious mustard and dill sauce. The end result is a beautiful, flavorful, and healthy dish that everyone will love!

Instructions

1.Rinse the salmon and pat it dry. Remove all the bones.
2.Mix the salt, sugar, and crushed white peppercorns in a small bowl.
3.Rub the mixture all over the salmon, then sprinkle with chopped dill.
4.Place the salmon in a deep dish, skin-side down. Cover tightly with plastic wrap, then foil.
5.Place a weight on top of the salmon. A brick wrapped in foil works well.
6.Refrigerate for 36 - 48 hours, turning the salmon every 12 hours.
7.Once the salmon is done, rinse it thoroughly and pat it dry.
8.In a small bowl, whisk together the mild mustard, mustard powder, sugar, wine vinegar, salad oil, salt, pepper, and chopped fresh dill.
9.Brush the mixture on top of the salmon, getting it into all the crevices and folds.
10.Slice and serve!
