Ingredients

2 gallons water
1 lb pickling salt
1 teaspoon saltpeter , I made it without and it was fine ( optional )
8 lbs boneless pork butt , tied ( I used the latter ) or 8 lbs pork loin roast ( I used the latter )
2 bay leaves
15 whole black peppercorns
5 whole allspice
Swedish Corned Pork Roast is a classic Scandinavian meal that is hearty and filling. The brining process gives the meat a distinct flavor and a tender texture that is sure to be a crowd-pleaser. Instructions

1.In a large pot, bring the water, pickling salt, and saltpeter (if using) to a boil, stirring until the salt dissolves.
2.Remove from heat and let cool to room temperature.
3.Place the pork in a large nonreactive container and pour the cooled brine over it, making sure the meat is completely submerged.
4.Add the bay leaves, peppercorns, and allspice to the brine.
5.Cover and refrigerate for at least 5 days.
6.When ready to cook, preheat the oven to 350°F.
7.Remove the pork from the brine and discard the brine and spices.
8.Pat the pork dry and place in a roasting pan.
9.Roast in the oven for 2-3 hours, or until the internal temperature reaches 145°F.
10.Let rest for 10 minutes before carving and serving.

PROS

This pork roast is bursting with flavor and incredibly tender.

It’s a great dish for a special occasion or when you want to impress guests.

CONS

The preparation requires some advance planning as the meat needs to be brined for at least 5 days.

It also takes several hours to cook, so plan accordingly.
