Ingredients

2/3 cup soymilk
2 teaspoons dry active yeast
1 teaspoon sugar ( or sub honey or agave nectar )
2 tablespoons soy yogurt ( plain or vanilla )
1/4 cup sugar ( I use organic evaporated cane juice )
1/2 teaspoon salt
1 1/2 teaspoons ground cardamom
1 1/2 cups unbleached all-purpose flour
1 cup whole wheat flour
1/4 cup Earth Balance margarine , cold ( cut into small pieces )
2 tablespoons Earth Balance margarine , room temperature
2 tablespoons sugar
1 tablespoon cinnamon
soymilk ( to brush on top )
sugar ( to sprinkle on top )
Swedish Cinnamon Rolls are a classic pastry that originated in Sweden, and are enjoyed by people all over the world. Unlike traditional cinnamon rolls, these vegan cinnamon rolls are made without any dairy or eggs and are a healthier alternative that’s perfect for vegans or those who are looking to reduce their dairy or egg intake. Instructions

1.In a small saucepan, heat soymilk until warm but not boiling and remove from heat.
2.Stir in yeast and 1 teaspoon sugar until dissolved and set aside for 5 minutes.
3.In a mixing bowl, whisk together the soy yogurt, 1/4 cup sugar, salt, cardamom, unbleached all-purpose flour and whole wheat flour.
4.Add cold margarine pieces to the mix and mix with a fork or pastry cutter until the mixture resembles coarse sand.
5.Pour the milk-yeast mixture into the flour mixture and stir until the dough is shaggy.
6.Turn the dough onto a lightly floured surface and knead until smooth and elastic, about 10 minutes.
7.Cover the bowl with a clean towel and let the dough rest for 10 minutes.
8.Preheat the oven to 375˚F and mix together 2 tablespoons of Earth Balance margarine with 2 tablespoons of sugar and 1 tablespoon of cinnamon in a small bowl.
9.Roll out the dough on a lightly floured surface with a rolling pin into a rectangle shape.
10.Spread the cinnamon mixture over the dough, leaving a 1-inch border around the edges.
11.Roll the dough tightly into a log starting from the long side and pinch the seams together to seal.
12.Cut the log crosswise into 12 rolls with a sharp knife and place them cut side up in a greased 9x13 inch baking dish.
13.Brush the rolls with soymilk and sprinkle some sugar on top.
14.Bake for 25-30 minutes, until golden brown and let the rolls cool slightly before serving.

PROS

These vegan cinnamon rolls are fluffy, gooey, and full of cinnamon flavor, making them the perfect pastry for breakfast, brunch or dessert.

They are made with mostly unrefined ingredients and can easily be made at home.
