8 medium potatoes , peeled
1 1/2 ounces butter , melted
3 garlic cloves , crushed ( mixed with the butter )
1 1/2 teaspoons salt
pepper
1 1/2 ounces parmesan cheese ( optional )
2 tablespoons fresh whole wheat bread crumbs

Instructions

1.Preheat the oven to 200C. Line a baking tray with parchment paper.
2.Cut the potatoes crosswise but not all the way through, lay on a cutting board or wooden spoons, and cut thin slits into the potatoes, about 1/8-inch apart.
3.In a small bowl mix melted butter, garlic, salt and pepper. Using a brush, coat the potatoes with the mixture, spreading it generously between the slits.
4.Place the potatoes on the prepared baking tray and sprinkle with parmesan cheese and bread crumbs.
5.Bake the potatoes for 45-55 minutes or until the internal temperature reaches 210°F (100°C).
