Ingredients

1 tablespoon butter
2 cloves garlic , minced
1/2 red bell pepper , diced
1 habanero pepper , seeded and minced
1 can pineapple chunks , packed in juice , drained
1 lb bay scallop
1/2 lime , juice of
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon coconut extract
1/2 cup captain morgans 's spiced rum
1 tablespoon cornstarch
3 tablespoons water
hot steamed rice

Instructions

1.Heat a skillet over medium-high heat. Add butter, garlic, red bell pepper and habanero pepper. Cook for 2-3 minutes or until peppers start to soften.
2.Add pineapple chunks and bay scallops. Cook for 3-4 minutes or until scallops are cooked through.
3.Add lime juice, salt, pepper, coconut extract, and spiced rum. Cook for an additional 1-2 minutes or until sauce is slightly reduced.
4.In a small bowl, mix cornstarch and water. Add to the skillet and cook until sauce thickens, stirring constantly.
5.Serve hot over steamed rice.
