Ingredients

1/4 cup grated ginger ( about 3 inches of ginger , unpeeled )
1/4 cup black tea ( about 6 regular size tea bags-decaf , if desired , especially for children )
1 quart water
2 cups milk ( can use almond , soy , rice or coconut milk )
1/4 cup sugar , to taste ( can use honey , agave syrup , or stevia )
Swahili Ginger N’ Milk Tea is a traditional beverage in Mozambique that is made with ginger, milk, tea, and sugar/honey. Ginger is the dominant flavor, which adds a beautiful aroma and a slightly spicy taste to the drink. It is especially refreshing on a cold day or when feeling unwell. When mixed with black tea, it offers a unique taste with a mild tinge. Adding milk complements the tea's depth, making it creamier and smoother. This classic tea recipe originated from the Swahili coastal area of East Africa and was discovered by the Portuguese who brought it to Mozambique. Instructions

1.In a large saucepan, bring water and ginger to a boil.
2.Turn off heat and add in black tea bags and sugar/honey, stir well.
3.Cover saucepan and let it steep for at least 15 to 20 minutes.
4.After steeping, reheat the ginger tea over low heat, add milk, and let it simmer for about 5 minutes.
5.Remove from heat when milk is hot but not boiling.
6.Strain the mixture and pour into individual cups.
