Ingredients

1 large onion
3 stalks celery
1 carrot
1 cup cooked tomatoes
1 tablespoon pickling spices
1 tablespoon mustard
1/4 cup lemon juice
1 1/2 cups water
1 tablespoon salt
6 lbs beef loin roast or 6 lbs rump roast
6 slices bacon
4 tablespoons flour
1 pint sour cream
Svickovd- Marinated Beef is a traditional Czech dish, known for its delicious flavor and tender texture. The beef is marinated in a flavorful mixture of vegetables, spices, and acid, which helps to tenderize and flavor the meat. It is usually served with dumplings and a creamy sauce, making it a hearty and satisfying meal. Although it requires some time and effort to prepare, the end result is well worth it. This dish is perfect for special occasions or when you want to treat yourself to a delicious and comforting meal.

Instructions

1.Preheat oven to 300 degrees F (150 degrees C)
2.Pulse together onion, celery, and carrot in a food processor until finely chopped.
3.Add cooked tomatoes, pickling spices, mustard, lemon juice, water, and salt. Pulse until a liquid marinade forms
4.Place beef roast in a large resealable plastic bag. Pour marinade over beef, seal, and refrigerate for at least 8 hours or overnight.
5.Remove beef from marinade (discarding marinade) and pat dry with paper towels. Wrap beef with bacon slices and secure with toothpicks or kitchen twine.
6.Place beef in a roasting pan and bake for 3 to 4 hours, until internal temperature reaches 140 degrees F (60 degrees C) for medium-rare. Let rest for 10 to 15 minutes before slicing.
7.To make gravy, remove beef from roasting pan and keep warm. Whisk flour into pan drippings and cook over medium heat for 2 to 3 minutes, until flour is lightly browned. Gradually whisk in sour cream until smooth. Bring to a simmer and cook for 2 to 3 minutes, until gravy has thickened. Serve over sliced beef.
