6 tablespoons cold strong brewed coffee
1/4 cup brown sugar

3 1/2 ounces high quality milk chocolate
3 tablespoons milk
2 teaspoons butter
1 tablespoon heavy cream

Instructions

1.Preheat oven to 325 degrees F (165 degrees C).

3.Bake in the preheated oven for 10 minutes.
4.Soften the unflavored gelatin powder in 1/4 cup cold water and let sit for 5 minutes.

11.To make the topping, melt the milk chocolate, milk, and butter together in a double boiler over low heat.
12.Remove from the heat and stir in the heavy cream until smooth and glossy.
13.Pour the chocolate mixture over the cheesecake and let cool in the refrigerator for 30 minutes or until the topping is firm. Slice and serve.
