2 cups water
1 1/4 teaspoons salt
1 1/2 cups yellow cornmeal
5 tablespoons white sugar , or to taste ( optional )
4 ounces Edam cheese , shredded
2 cups oil for deep frying
1 cup ketchup
1 cup mayonnaise

Instructions

1.In a large saucepan over medium-high heat, bring the water and salt to a boil.
2.Gradually whisk in the cornmeal, stirring constantly until combined.
3.Reduce heat to low and continue stirring for 5-6 minutes until the mixture thickens and begins to pull away from the sides of the pan.
4.Remove from heat and stir in the sugar and shredded Edam cheese until well combined.
5.Allow the mixture to cool slightly before using your hands to shape it into oblong sticks about 3 inches long and 1 inch thick.
6.In a large skillet over medium-high heat, heat the oil until hot.
7.Working in batches, fry the cornmeal sticks until golden brown, turning occasionally, for about 3-4 minutes.
8.Remove the sticks from the oil with a slotted spoon and place them on a paper towel-lined plate to drain.
9.Serve hot with ketchup and mayonnaise.
