1 egg ( beaten )
2 cups sour cream
2 tablespoons melted butter
1 cup almonds ( chopped )
2 tablespoons lemon rind ( grated )
1 teaspoon vanilla
powdered sugar ( optional )
candied fruit ( optional )
Surmælksfrugtbrød is a traditional Danish fruit bread that is usually made in the winter months. This bread has a moist texture and is filled with dried apricots, prunes, and almonds. The addition of sour cream and lemon rind gives it a unique tangy flavor that balances well with the sweetness of the fruit. This bread is perfect for enjoying with a cup of coffee or tea on a cold winter morning.

Instructions

1.Preheat the oven to 350°F.
2.Grease a 9x5 inch loaf pan and dust with flour.
3.In a large mixing bowl, whisk together sugar, white flour, whole wheat flour, baking soda, baking powder, dried apricots, prunes, and salt.
4.In another mixing bowl, whisk together the egg, sour cream, melted butter, almonds, lemon rind, and vanilla.
5.Add the dry ingredients to the wet ingredients and stir until well combined.
6.Pour the batter into the prepared loaf pan.
7.Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
8.Allow the bread to cool for 10 minutes in the pan before removing and transferring to a wire rack to cool completely.
9.Optional: dust with powdered sugar or top with candied fruit.
