2 tablespoons lemon rind ( grated )
1 teaspoon vanilla
powdered sugar ( optional )

Surmælksfrugtbrød commonly known as Danish sour-cream fruit bread is a traditional Scandinavian sweet bread that is perfect for breakfast or as an afternoon snack. The bread is made with sour cream, which makes it moist and flavorful. The addition of chopped dried apricots, prunes, and almonds gives it a chewy texture and a nutty flavor. Instructions

1.Preheat the oven to 350°F.
2.In a mixing bowl, combine sugar, white flour, whole wheat flour, baking soda, baking powder, dried apricot, dried prune, and salt.
3.In a separate bowl, combine egg, sour cream, melted butter, chopped almonds, lemon rind, and vanilla. Mix well.
4.Add the wet ingredients to the dry ingredients. Mix until well combined.
5.Pour the batter into a greased loaf pan and smooth the top.
6.Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
7.Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
8.Slice and serve with powdered sugar and candied fruit if desired.
