Ingredients

1 teaspoon olive oil
2 cups chopped onions
3 1/2 cups water

2 bottles clam juice

1 tablespoon all-purpose flour
1 teaspoon sweet paprika
5 garlic cloves
1 lb diced peeled yukon gold potato
1 lb cod or 1 lb other lean white fish fillet
1 package frozen baby peas
1/4 teaspoon fresh ground black pepper
1/8 teaspoon salt
Suquet of Cod is a classic seafood dish from the Catalan region of Spain. This hearty fish stew is traditionally made with potatoes, onions, garlic, tomatoes, and fish stock, and then simmered with a variety of seafood, including shrimp, clams, and mussels. Instructions

1.Heat olive oil in a large pot over medium heat.
2.Add onions and garlic cloves, and cook for 5-7 minutes or until softened.
3.Add flour, sweet paprika, and saffron, and cook for another 2 minutes, stirring constantly.
4.Slowly pour in the clam juice, white wine, and water, stirring until smooth.
5.Add lemon slice, diced Yukon gold potatoes, and black pepper.
6.Bring to a boil, and then reduce heat to low and let simmer for 20 minutes, or until potatoes are tender.
7.Add the cod fish and baby peas, and continue cooking for 5-6 minutes or until fish is flaky and peas are tender.
8.Discard lemon slice, and garnish with fresh parsley leaves and slivered almonds before serving.
