Instructions

1.Preheat oven to 375°F.
2.Filet the chicken breasts by slicing them horizontally and opening them up like a book.
3.Layer a slice of ham and cheese onto one half of each chicken breast, then fold the other half over and secure with toothpicks.
4.Season the outside of the chicken breasts with salt and pepper.
5.Melt the butter in a large skillet over medium heat.
6.Dredge the stuffed chicken breasts in flour and place them into the heated skillet. Cook for 3-4 minutes per side, or until nicely browned.
7.Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
8.While the chicken is cooking, prepare the mushroom and tomato sauce. In a separate pan, sauté the mushrooms and shallots until the mushrooms have released their liquid and are browned. Add the wine and simmer for 2-3 minutes, then add the tomatoes and cream. Simmer for an additional 2-3 minutes, until the sauce has thickened.
9.Once the chicken is done, remove the toothpicks and top with the mushroom and tomato sauce before serving.
