3 red bell peppers
2 yellow bell peppers
2 garlic cloves , finely minced
1 tablespoon parsley , chopped

1 cup chopped fresh parsley ( or less if you 're not fond of parsley )
3 egg yolks

200 g high quality parmesan cheese ( freshly grated )
1/2 cup high quality balsamic vinegar
4 cups arugula leaves , washed and dried
1/4 teaspoon salt

Instructions
