Ingredients

1 can fava beans
1 cup water
3 tablespoons lemon juice
1/2 - 1 teaspoon minced garlic
2 tablespoons olive oil ( good quality )
1/3 teaspoon salt ( to taste )
1/3 cup fresh parsley , finely chopped
1/2 teaspoon chili flakes ( optional )
Fool medammas is a traditional Mediterranean breakfast dish that is made from cooked fava beans. Instructions

1.Drain the fava beans well and rinse them under cold water, then drain them again.
2.In a saucepan, add the drained fava beans, water, lemon juice, minced garlic, olive oil and salt. Mix well and bring to a boil over medium heat.
3.Remove the pan from heat and pour the mixture into a container to cool down.
4.Stir in the chopped parsley and the chili flakes (optional) just before serving.
5.Serve the chilled fool medammas with pita bread or other favorite breads.
