Ingredients

1 1/4 lbs skinless salmon fillets , cut into chunks
2 tablespoons Thai red curry paste
1 1/2 inches fresh gingerroot , grated
1 teaspoon soy sauce
1/2 cup coriander , divided
1 teaspoon vegetable oil
lemon wedge , to serve
2 carrots
1 small cucumbers or 1/2 large cucumber
2 tablespoons white wine vinegar
1 teaspoon golden caster sugar

Instructions

1.In a food processor, pulse the salmon until finely chopped.

6.In a small bowl, whisk together the white wine vinegar and golden caster sugar to make a dressing.
7.Add the remaining coriander to the carrot and cucumber salad, then dress with the white wine vinegar mixture.
8.Serve the salmon burgers with the carrot and cucumber salad and a wedge of lemon.
