450 g pineapple , peices
1 1/2 cups self-rising flour
1/2 cup caster sugar
2 eggs
1/2 cup sour cream
120 g butter , melted
2 cups icing sugar
2 tablespoons butter
3 tablespoons pineapple juice ( from the can )

Instructions

1.Preheat oven to 180°C. Grease a 20cm round cake pan and line the base with baking paper.
2.Drain pineapple pieces and save 3 tablespoons of pineapple juice.
3.Sift self-rising flour into a large bowl. Add caster sugar, eggs, sour cream, melted butter, and pineapple pieces. Mix with a spoon until well combined.
4.Pour mixture into cake pan.
5.Bake for 35-40 minutes or until a skewer inserted into the centre of the cake comes out clean.
6.Leave the cake in the pan for 5 minutes then turn onto a wire rack to cool completely.
7.In a medium sized bowl, sift icing sugar. Add 2 tablespoons of butter and 3 tablespoons of reserved pineapple juice. Mix until smooth. Spread icing over cooled cake.
