Ingredients

1/3 cup salt
5 Yukon Gold potatoes , cut in half
1 cup frozen peas
1/2 teaspoon ground black pepper
1/2 teaspoon ground coriander
1 package pastry for double crust 9-inch pies , thawed
1 tablespoon chopped fresh mint , or to taste
Samosa Pie is a fusion dish combining the traditional Indian Samosa with a Western-style pie. It’s a delicious and filling dish that’s perfect for a quick dinner or lunch. The filling is made with cooked potatoes and peas, flavored with coriander, and fresh mint. The mixture is then encased in a pie crust and baked in the oven until golden brown. Instructions

1.Preheat oven to 200°C.
2.Fill a large pot with water, add salt, and bring to a boil. Add potatoes and cook until tender, about 20 minutes. Drain.
3.In a large bowl, mix together cooked potatoes, frozen peas, black pepper, coriander, and fresh mint.
4.Roll out one half of the pie dough and place it into a 9-inch pie pan. Pour the potato mixture into the pie crust.
5.Roll out the second half of the pie dough and place it on top of the potato mixture. Pinch the edges of the two pie doughs together to seal the filling inside.
6.Cut a few slits in the top of the pie to allow steam to escape.
7.Bake for 35 to 40 minutes, or until the crust is golden brown. Let cool for a few minutes before serving.
