1 lb boneless chicken breast
1 lemon
1 teaspoon salt

1 cup chopped tomato
1 onion
4 garlic cloves

2 tablespoons butter
2 tablespoons vegetable oil
1 cup milk
2 tablespoons salted cashews
1/4 cup cream

Instructions

1.In a medium-sized bowl, marinate the chicken breast in the juice of 1 lemon, 1 tsp salt, 1 tsp paprika, 1/2 tsp cayenne pepper, 1/4 tsp ground cinnamon, 1/4 tsp cumin pwd, and 1/4 tsp black pepper for at least 30 minutes.
2.While the chicken is marinating, blend together 1 cup chopped tomato, 1 onion, 4 garlic cloves and 1-inch piece of ginger in a food processor until smooth.
3.In a deep skillet or pan, heat up 2 tbsp of butter and 2 tbsp of vegetable oil over medium heat. Add the tomato/onion/ginger/garlic mixture and simmer for 10-15 minutes until the liquid has reduced and the mixture is thick and paste-like.
4.Add the marinated chicken to the pan and cook for 10-12 minutes until cooked through.
5.Add 1 cup of milk and continue to simmer for a few minutes until the sauce has thickened to your preference.
6.Garnish with 2 tbsp of salted cashews and 1/4 cup of cream. Serve alongside rice or naan bread.
