1 large eggplant , cut in half lengthwise
1 head garlic , unpeeled
2 tablespoons olive oil
salt and pepper , to taste ( optional )

Instructions

1.Preheat oven to 375°F.
2.Place eggplant halves cut-side down on a baking sheet lined with parchment paper.
3.Slice off the top of the garlic head and place it on a small piece of foil.
4.Drizzle 1 tablespoon of olive oil over the garlic head and wrap the foil around it securely.
5.Place the garlic foil packet on the baking sheet with the eggplant halves.
6.Roast the eggplant and garlic for 45 minutes, or until the eggplant is soft and tender.
7.Scoop the eggplant flesh out of the skin and place it into a food processor.
8.Squeeze the roasted garlic out of the head and add it to the food processor, along with 1 tablespoon of olive oil and salt and pepper to taste.
9.Pulse the mixture until it is smooth and creamy.
10.Serve the Baba Ghanouj dip alongside your favorite vegetables or crackers.
