Ingredients

4 cups cheese , shredded ( whatever kind you like , I usually used a reduced fat Mexican blend inside and pepper jack for the to )
1 can diced green chilies
2 cans 98 % fat-free cream of chicken soup
1 package light sour cream
8 -10 flour tortillas
1 package taco seasoning mix ( HOT is best ! )
1 tablespoon poultry seasoning ( Paul Prudhomme 's )

Instructions

1.Preheat oven to 350 degrees F.
2.Cook chicken breasts until no longer pink and shred into small pieces.
3.Chop the yellow onion and sauté in a large skillet for 2-3 minutes until translucent.
4.Add shredded chicken, taco seasoning, 1 can of cream of chicken soup, and 1 can of diced green chilies. Cook for an additional 5 minutes.
5.Combine the remaining can of cream of chicken soup and light sour cream in a separate bowl.
6.Spread a thin layer of the sour cream mixture onto each flour tortilla.
7.Spoon chicken mixture onto tortillas and roll them up.
8.Place the rolled tortillas into a baking dish, cover with the remaining sour cream mixture, and sprinkle with shredded cheese.
9.Bake uncovered for 20-30 minutes until the cheese is melted and bubbly.
