375 g mixed dried fruit ( fruit medley , see above )
1 cup orange juice
1/4 cup apple juice
3/4 cup grated apple
3/4 cup grated raw pumpkin
1/4 cup grated raw carrot
2 egg whites , lightly beaten
1 1/4 cups wholemeal self-rising flour
1/4 cup skim milk powder
1 tablespoon cocoa
1 teaspoon mixed spice

Instructions

1.Preheat oven to 350°F (180°C).
2.In a large bowl, combine the mixed dried fruit, orange juice, apple juice, grated apple, grated raw pumpkin, grated raw carrot, and lightly beaten egg whites.
3.In a separate bowl, whisk together the wholemeal self-rising flour, skim milk powder, cocoa, and mixed spice.
4.Slowly add the dry ingredients to the wet ingredients, stirring until well combined.
5.Grease a 9-inch square baking pan, and pour in the mixture, smoothing the top evenly.
6.Bake for 50-60 minutes, or until an inserted toothpick comes out clean.
7.Allow the cake to cool in the pan for 10 minutes before removing it and allowing it to cool completely on a wire rack.
