2 ounces linseeds
2 ounces whole oats
2 ounces buckwheat groats
2 ounces millet
2 cups boiling water
9 ounces white flour ( Type 405 )
9 ounces whole wheat flour
1 cake yeast
2 tablespoons runny honey
2 -3 teaspoons ground sea salt
butter , to grease the tin

Instructions

1.Preheat the oven to 390°F (200°C) and grease a loaf tin with butter.
2.In a large bowl, mix together the sunflower seeds, linseeds, whole oats, buckwheat groats, and millet.
3.Pour in the boiling water and stir until well combined. Leave to sit for 30 minutes.
4.In a separate bowl, mix together the white flour and whole wheat flour.
5.Squeeze the cake of yeast into the soaked seed mixture and stir well.
6.Add the honey and the salt to the seed mixture and stir.
7.Gradually add the flour mixture to the seed mixture, stirring until it forms a dough.
8.Turn the dough out onto a floured surface and knead for about 5 minutes.
9.Shape the dough into a loaf and place in the prepared tin.
10.Bake for approximately 45 minutes or until the bread sounds hollow when tapped.
