1 sheet puff pastry
1 eggplant
100 g feta
1/4 cup parsley , chopped
1 can baked beans
1 red pepper , chopped
black pepper , to taste
1/4 cup oat bran
1/2 cup cheese , grated
These hearty Sunday Supper Pot Pies are a great comfort food dinner option. Loaded with healthy eggplants, red pepper, and feta cheese, this dish is a great way to sneak some veggies into your diet without sacrificing flavor. Instructions

1.Preheat your oven to 400°F (200°C)
2.Cut the eggplant and red pepper into small bite-sized pieces and toss them with black pepper, oat bran and set it aside.
3.Roll out the puff pastry to 1/4 inch thickness and using a round pastry cutter, cut out 4 disks, and place them on a parchment-lined baking sheet.
4.Divide the baked beans equally onto each disk, top with the eggplant and red pepper mixture, and crumble the feta over the top. Sprinkle cheese and chopped parsley over the cheese.
5.Brush a beaten egg over the pastry edges and bake for 18-20 minutes until they are golden brown. Let them cool for at least 5 minutes before serving.
