2 tablespoons finely chopped fresh basil
1 pound ground beef
3/4 cup water

2/3 large English cucumber , thinly sliced
2 large carrots , thinly sliced
4 sun-dried tomatoes , cut into strips
hot sauce to taste
These Sun-Dried Tomato and Basil Yogurt Tacos are a twist on traditional beef tacos. The addition of yogurt and fresh basil adds a unique flavor profile that makes them stand out from other Mexican dishes. The toppings of cucumber, carrot, and sun-dried tomatoes add crunch and texture to the dish, while the mozzarella cheese gives it a gooey and cheesy finish. Despite the name, these tacos do not actually contain sun-dried tomato in the filling itself, rather they are used as a topping to add some extra flavor. These tacos are perfect for a quick and easy weeknight dinner, as they come together easily and can be customized with your own favorite toppings.
