Ingredients

1/4 cup white wine vinegar
2 tablespoons extra virgin olive oil
2 tablespoons water
1 tablespoon parmesan cheese , grated
2 teaspoons fresh thyme , snipped
2 garlic cloves , minced
1/4 teaspoon salt
1/4 teaspoon black pepper
12 ounces boneless skinless chicken breasts ( free-range , organic chicken is best )
1 cup green beans , cut into bite-sized pieces
2 cups brown rice and wild rice ( cooked according to package directions and chilled )
1 jar artichoke hearts , drained and quartered
1 cup red cabbage , shredded
1/2 cup carrot , shredded
1/2 cup celery , diced
2 scallions , sliced

Instructions

1.In a small bowl, whisk together the vinegar, olive oil, water, parmesan cheese, thyme, garlic, salt, and pepper to make a dressing.
2.Place the chicken in a large resealable plastic bag and add half of the dressing. Seal the bag and turn to coat the chicken.
3.Heat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for 8-10 minutes on each side, or until cooked through.
4.Cut the chicken into bite-sized pieces and set aside.
5.In a large bowl, combine the cooked brown and wild rice, green beans, artichoke hearts, red cabbage, carrot, celery, and scallions. Drizzle with the remaining dressing and toss to coat.
6.Add the chicken and toss again. Serve chilled.
