Instructions

1.In a medium bowl, mix together cream cheese, powdered sugar, 2 tablespoons of cornstarch, egg yolk, 2 tablespoons of sugar and vanilla until well combined.
2.Roll out pie crust into a large circle, then cut into 6-8 circles about 4-5 inches in diameter.
3.In a separate bowl, toss the sliced fruit with remaining tablespoon of cornstarch and tablespoon of sugar.
4.Spread a tablespoon or two of the cream cheese mixture onto the center of each circle of pie crust.
5.Place a few slices of fruit over the cream cheese mixture.
6.Fold the edges of the pie crust up and around the fruit mixture, pinching together as you go to create a rustic crust.
7.Brush egg white onto the edges of the crust.
8.Place galettes on a baking sheet lined with parchment paper and bake at 375 degrees F for 20-25 minutes, or until the crust is golden brown.
