Ingredients

2 2 tablespoons margarine or 2 tablespoons olive oil
1 1/2 lbs beef sirloin steaks , cut into thin strips
2 cups water
1/3 cup low sodium soy sauce
1 package sliced mushrooms
1 can bamboo shoots , drained
1 can sliced water chestnuts , drained
1 1/2 cups fresh bean sprouts
1/4 cup sliced green onion
2 tablespoons sugar or 2 tablespoons sugar substitute
1/2 teaspoon finely chopped garlic
1/4 cup water
4 teaspoons cornstarch
6 cups fluffy cooked white rice

Instructions

1.In a wok or large skillet over medium-high heat, melt margarine or add olive oil.
2.Add the beef strips and cook until browned on all sides, about 5-7 minutes.
3.While the beef is cooking, combine water, soy sauce, mushrooms, bamboo shoots, water chestnuts, bean sprouts, green onion, sugar, and garlic in a separate bowl.
4.Once the beef is done, pour the water and soy sauce mixture into the wok and stir to combine.
5.Reduce heat to low and let the mixture simmer for 20-30 minutes.
6.While the mixture is simmering, mix together the water and cornstarch in a small bowl and set aside.
7.Once the mixture is done simmering, stir in the cornstarch mixture and cook for an additional 2-3 minutes, or until the mixture has thickened.
8.Serve over fluffy cooked white rice.
