Ingredients

3 cups rice
1 tablespoon butter or 1 tablespoon oil
1 teaspoon salt
1 teaspoon turmeric , or
1 teaspoon coriander , or
1 teaspoon cardamom
3 cups chicken stock
Sudani Rice is a traditional dish from Sudan, where it is also known as 'Ramadan Rice' for its popularity during the fasting month of Ramadan. The dish is typically served with a side of salad or roasted meat, and sometimes topped with fried onions. Instructions

1.Rinse the rice thoroughly and soak it in water for 30 minutes.
2.In a large pot, melt the butter or heat the oil over medium heat.
3.Add the salt and the choice of spice (turmeric, coriander or cardamom) and stir for a minute.
4.Drain the rice and add it to the pot. Stir the rice with the spices for two minutes.
5.Add the chicken stock and bring to a boil. Cover the pot and reduce the heat.
