Ingredients

1 1/4 cups flour
1/4 teaspoon salt
1/2 cup butter
3 tablespoons cold water
3 cups diced peaches
1/2 cup white sugar
1/3 cup flour
1/8 teaspoon salt
1/3 cup sour cream
1/4 cup heavy cream
2 large eggs
2 teaspoons vanilla or 1 teaspoon vanilla extract
1/2 cup flour
1/2 cup brown sugar
4 tablespoons butter , cut into small pieces
This peach pie is the perfect way to use up an abundance of fresh, ripe peaches. The filling is both sweet and tangy, with a smooth, creamy texture that contrasts nicely with the buttery crust. While making a homemade pie crust can be a bit of a project, the end result is well worth it, and the filling itself is quite simple to prepare. Enjoy a slice of this pie on a warm summer evening with a dollop of whipped cream or a scoop of vanilla ice cream.
